The high altitude and rich soil of Copan Las Capucas yields an astonishing coffee characterized by an aroma of honeysuckle and maple, sparkling green apple acidity, very light, crisp mouth–feel and a finish of baker's chocolate. Sunny days and cool nights allow this coffee to mature slowly, concentrating the flavor. Like most Latin American coffees, Honduras pairs well with any breakfast bread with nuts, like Pecan Coffee Cake or Swedish Nut Cake.
