Fresh Beans
The peak flavor of coffee can only be reached with fresh beans. Try not to buy more coffee than you can drink in a week. Storage
Contrary to common opinion, coffee should never be stored in the freezer or refrigerator. Coffee is very subjective to its surroundings, and will pick up flavors of other foods in your freezer or refrigerator. To keep your coffee fresh, store it in an airtight container in a cool, dark, dry place to protect it against the staling effects of heat, light, and moisture. It is possible for metal or plastic containers to contaminate your coffees flavor, so use a ceramic container if possible.
Grinding
In whole bean form, coffee acts as its own airtight container, trapping flavor and aromatic compounds within. Once ground, the coffee’s complexity and richness dissipates rapidly. To ensure more flavors end up in your cup and do not vanish into thin air, keep your coffee in whole bean form as long as possible, and grind only what you are going to brew immediately prior to brewing.
Water
Great coffee begins with great water. Freshly drawn, filtered cold water is recommended. Try to avoid using water from the tap, or water that has already boiled.
Proportion
Most people associate “strong” coffee with dark roasts and “weak” coffee with light roasts. Truth is, the strength of coffee is completely dependent on the ratio of coffee grounds to ounces of water. For this reason, you can brew a lightly roasted coffee very strong, and a darkly roasted coffee very weak. Our recommendation is to add two level tablespoons of freshly ground coffee for every six ounces of water, regardless of the roast. In the end, it is completely up to you! Adjust the ratio of grounds to water to meet your palate’s desired taste.
